Making a nice dish of Jollof Rice could be troublesome and it could take more than an hour to finish it besides the preparation and the clean-up. There are a lot of reasons that we don’t have much time to do it. Some people are too busy with works and family, like taking care of children to do the cooking, or not ready for standing next to a stove or a pot, or just being lazy. Moreover, even after the one-hour hard work, you could possibly fail.
In short, we just want nice food that could be done by ourselves, and we want it to be easy and quick.
Let’s try with a rice cooker for your Jollof Rice. In the process, most of the works you need to do is preparation and cleaning up at a minimum level, and let the rice cooker do the rest.
There are plenty of tutorials on the internet, each one has its own special treat. In this one, I’m trying to provide a general tutorial that has a high chance to succeed.

Ingredient
Rice 1kg
1.5 can of chopped tomatoes(You can use 3-4 fresh tomatoes)
1-2 Scotch bonnet pepper(It depends on your tolerance of spicy)
1 Onion
120g Tomato puree
1tbs Thyme
½ cup Olive Oil
3-4 Maggi cubes(For salty flavor)
3 cups of Water
Method
It can be divided into 3 parts: Rice, Seasoning, and Cooking.
First, wash the rice repeatedly for 3 to 4 times for washing out the starch, which could affect the taste of the Jollof rice. Rinse the rice and put it in the cooker. Put Maggi cubes, you can choose to use salt, into the cooker, and then use a spoon to crush it into the rice. And don’t start cooking it yet.
The second step, let’s mix the seasoning. You can do it in 2 different ways. One, you can slice it into the proper size and put it into the pot along with the tomato puree, sliced pepper, and a few olive oil, boil them together to get the flavors. However, if you don’t want to stand near to the pot for not having any chance to burn yourself, then simply blend the sliced onions, chopped tomatoes, , the tomato puree, and the bonnet pepper with the blender. After blended it, pour it down into the cooker and properly stir the rice in order to mix the rice and the blended ingredients.
*If you cook those ingredients, the flavors could get stronger than brew it in the cooker.
At this point, put the thyme and oil into the cooker, and stir it gently to properly mix all the ingredients. Add water into it and make it just above the rice. Final step, turn on the cooker, let it do the rest of the work for you. (Get yourself with a fine rice cooker)
You can check the result back and forth until it suits your taste after around 12 minutes. Remember to gently stir whenever you check it.
The Jollof Rice is Done! You can put your side dishes, like salad, chicken, and delicious dodo.
